What is Gluten? Gluten is a protein found in some grains, notably wheat, rye, and barley. It is added to some foods to increase protein content. It's added to many as a thickener. And more varieties of meat substitutes are gluten based.
People affected by Celiac Disease must avoid gluten which hasn't been easy in the past but is getting easier with new gluten-free products becoming available every day. The Food Allergen Labeling and Consumer Protection Act (FALCPA) has made it a much safer world for people of all allergies. Wheat and Gluten is now mandated to be listed in all packaged foods (but not delis or restaurants).
